Gluten-Free Confetti Brownie in a Mug

The gluten-free cake in a mug turned out to be so good that I decided to give a gluten-free brownie in a mug a whirl.

The fun part about this recipe is that you can tweak it any way you like. Want a sweeter brownie? Add a bit more sugar.

Like it gooey? Cook it a bit less. Not chocolaty enough? Add an extra tablespoon of cocoa powder and eliminate the extra teaspoon of rice milk.

Gluten-Free Confetti Brownie in a Mug

This recipe is gluten-free, egg-free, dairy-free and nut-free. Recipe makes one brownie in a mug.

Ingredients
2 tablespoons oil
2 tablespoons + 1 teaspoon rice milk
1/2 teaspoon GF vanilla extract
Dash of kosher salt
2 tablespoons sugar
1 tablespoon unsweetened cocoa powder
4 tablespoons brown rice flour
GF Sprinkles

Combine all the ingredients in a microwaveable mug. Stir until thoroughly blended. Top liberally with sprinkles. Microwave on high for 30 seconds and check for desired doneness. If it is not ready, continue heating it at 10 second intervals. (The time will often vary depending on the microwave’s wattage and the size of the mug.)
